Orange Candle's

DIY: ORANGE CANDLE'S

Ingredients:
• 1 orange
• olive oil
• 1 sharp paring knife
• Lighter

*Essential Oils (Optional) and Cloves (Optional)

First you're going to want to carve your orange, slice into the skin but try not to pierce the flesh of the orange. Put your finger gently in the orange and peel back the skin. The most important thing is to keep the long stem in the middle intact; this will be your wick. You also need to cut a hole in the top half of the orange to vent. I let the Orange’s dry out for a few hours then poured some olive oil in the bottom half (let sit for ten minutes to soak in) then lit.  *I also used cloves to decorate them, you can leave them plain or add a little design, both ways look super cute.
NOTE: The tough part is getting the "wick" to light. You really need a nice bit of Orange "flesh" sticking up in the middle, and has to have oil on it. If your Orange doesn't have any flesh in the middle OR if you rip it, you'll need to start with another one. Be prepared to hold the lighter there for a minute or two….But once it lights they are Beautiful and Smell Wonderful...not like oranges the oranges don’t actually smell like oranges after you gut them, but I add a few drops of essential oil to the olive oil!!!

"Apple Pie" Pops

Tonight went from Relaxing/Dinner/Movie to a Full on Bake Session!! I’m getting so excited for Valentine’s Day….This month is Full of Love, as it’s not Only Valentine’s Day but our Anniversary.

These may be the Cutest things ever….. Mini  "Apple Pie" Pops!
Ralph LOVES Apple pie and I only make it during the fall…but as Valentine’s Day is rapidly approaching I decided to make Ralph a Sweet Treat. (He wasn't a fan of the Raspberry "Love" Bites I just made. The raspberries were pretty tart and its hard to find good ones because they are out of season.) But I still thought they were Wicked Cute!

I made it easy on myself and bought pie crust and simply took a heart cookie cutter to make mini pies…The filling is exactly how you make an apple pie filling but just make sure you chop up the apple really really small (and you only need one apple).

After this Year of Solid Baking I'm going to Have to do some Serious Working out!! But its ALL been So Yummy....Coming Soon "Healthy Baking" Stay Tuned.

"Love" Raspberry Bites

I know I said I would wait till February to start Blogging about MY FAVORITE MONTH ever….But I can’t!! Tonight for our “Date Night” Dessert I took these Raspberries and adorned them with Ghirardelli white Chocolate chips. I call them "LOVE" Bites...and will definitely be making them for our Valentines Get-A-Way...

It’s so easy to make these…Raspberries and white chocolate chips (It’s better to use high quality chocolate to give it that rich flavor).  Wash the Raspberries, pat dry, take the chocolate chip, and flip it so it goes in flush with the raspberry. They look so festive and perfect for the Month of FEBRUARY.

*You can also add them as a topping to your IceCream.

Enjoy your weekend Ya'll

Oreo Cookies and Cream No-Bake Cheesecake

Oreo Cookies and Cream No-Bake Cheesecake

Makes 16 mini 2 inch cheesecakes or one 8 inch cheesecake.
Ingredients:
Crust:
1 1/2 cup crushed graham cracker
1/4 cup packed light brown sugar
7 tablespoon unsalted butter(melted)
Cheesecake:
2 ¼ cups heavy cream
1 pound cream cheese, softened
2/3 cup sugar
½ teaspoon salt
1 tablespoon lemon juice
2 teaspoon vanilla powder
¾ cups Oreo Cookies, crushed
Instructions:
Crust:
1. Combine graham cracker crumbs with sugar.
2. Add melted butter and blend until combined.
3. Press into pan. Set aside.
Cheesecake:
1. Beat heavy cream until medium peaks form. Set aside.
2. Add cream cheese, sugar, salt, vanilla powder, lemon juice to a bowl and beat with a paddle attachment until smooth (approximately 3-5 mins). If you do not have a stand mixer or a paddle attachment a hand beater will work as well, but will take twice as long to achieve a smooth consistency.
3. Add cream cheese mixture to heavy cream and beat until incorporated.
4. Gently fold in Oreo cookies.
5. Fill chosen pan with a slight mound at the center, as the cheesecake will become slightly sunken at the center.
6. Refrigerate for at least 6 hours to set or overnight for best results.
7. Remove from refrigerator and smooth top to level with edges. Serve with whipping cream and garnish with mini Oreos.

New Years Eve Tradition

Our Jar is already getting Full..... I forgot to tell you all about our NEW YEARS EVE Tradition. We keep a Glass Jar on a shelf in our Home with a pen, Paperclip with some scraps of paper attached to the side...All year Long we add little Notes if anything funny happens during our Day to Day life. On New Years Eve after Dinner as we are trying our very Best to stay awake (we are not Night Owls) We get the jar and read one by one funny events that have happened throughout the Year.

I have Added Two this week...As we have finally opened the app "Photo Booth" on the ipad and took the most ridiculous pictures of each other...we were literally in tears laughing, as a matter of Fact I don't think I have ever seen Ralph laugh that hard in my life...and one from a few days ago when I heard a thud out side and saw Ralph on the ground (he had slipped on ice) He was OK but oh my gosh I was laughing for days...actually typing this now Laughing. I'm sure New Years Eve I will still be laughing.

The Best part is....We don't tell each other when we add something to the Jar so its a surprise that night what the other one put it....Its so Funny to see all the stupid yet hysterical things that you do throughout the year.

New Dog

Ralph and I have been tinkering with the idea of getting another dog....To be Honest with you and myself I don't see this being a reality until the end of 2013 when I graduate FSU. Although that hasn't stopped our minds from wondering at the prospect of happy little puppy feet scurrying through our little nest.
Our First thought was...What is a good Dog to have with Children?? Yes- we want many of those ;) Also looking for a well mannered dog that will also be added security to our Home. We do have ADT (we have yet to figure it out since moving) and really when you look at Ralph, who in there right mind would break in...but I Love to feel safe. Overall we just want a NICE dog.... After much thought we have decided upon a LAB

Of course I started looking into things for our Home and found some REALLY amazing Idea's that I would Like LOVE to have. Josh my little Black dog loves "Nooks" he will go right under your feet if he feels scared and loves to hide when he hears loud noises.I hate clutter and would never want a big black crate sitting in my living room so I started to think about underutilized spaces in the house and thought of all the space not used under the stairs (empty space) and as soon as I typed in under the stairs dog nooks I found the Cutest ideas!!! Check this out.....
I absolutely cant take how much I love this and although I want to take a Hammer and put a hole in the wall right now...I will wait till Ralph gets home to present him with this idea.

Sammie and Josh have ity bity bowls that would obviously not work for our potential new dog and I Love Sam and Josh's "cast-iron wired antiquey looking" styled dishes but when I started looking into fun ideas for dog dishes I found this.....
This Springs Goal: YARD SALES to find a pair of Childrens Vintage Chairs that Ralph will have to alter by adding two stainless steel bowls.

3rd Grade

 3rd GRADE HERE I COME...
I cant believe how F A S T going back to college has been.... The thought was rather daunting when I made the decision to leave the Beauty industry 2 years ago (I still keep my license up, always good to have), but here I am getting ready to do my STUDENT TEACHING this week at a local elementary school. Its hard to believe that in a year and a half (which will surely fly by) I will be in my very own classroom!!

Throughout this college experience I have learned that it is always better to take more than less. I have been taking extra courses because I have decided that I also may want to be a High School Guidance Counselor. So MANY exciting things happening... oh and I don't mean to toot my own horn but did I mention that I also made it this far on High Honors, Deans List and had been honored into Phi Theta Kappa (*toot toot). ;) Ralph has been my True "Cheerleader" and haven eaten "Whole Foods Hot Bar" for the past week I would say a true sport :o) I know once I get into the swing of things this semester it will get easier....The pay off will be the Biggest Reward of all.

                                                                        Happy Monday Everyone.

The Notebook

Ralph was out plowing all day as we finally got Snow in New England. I knew he would be exhausted when he got home so I took out the Soprano's cookbook and made a big pot of Sauce and Meatballs...Cleaned the house, lit some candles and awaited his arrival.

                                        He got home.
                                                                 Showered.
                                                                                      Had a Romantic Dinner.

Heartache

 Heartache.
                 Loss.
Anger, anger towards a beast of a disease that has no mercy…

I have been a whirlwind of emotions these past few days as I sat on the phone with my best friend while she had to watch her father in law slowly pass away to cancer.  As a wife of 28 years had to say goodbye to the love of her life and as two sons said goodbye to their father. As a family that had to let go of their future with a man who wasn’t ready to go….
Edwin “Eddy” Pavao, 50 passed away Monday, January 16, 2012 surrounded by his loving Family.

I’ll never forget the look on Kevin’s fathers face when he watched his son marry his soul mate or as he wiped away the tears during his speech at the rehearsal dinner as he spoke of how proud he was of his son and his accomplishments. I watched as he looked upon his other Son Chris blow out his birthday candles that very same night and the tears were brimming on the surface yet again, it was a father who watched his grown boys taking on new journeys in their lives and he was there, there to laugh, hug and to savor every moment with his family, time that cancer had not yet stolen.
Moments captured in time…. Love caught forever in a frame and in their hearts.

My faith gets shaken as I want to scream… DON’T DO THIS TO NORMA, don’t take her husband. My heart aches as I say the words as I know God had a bigger plan.

The LORD is near to the brokenhearted and saves the crushed in spirit.

Psalm 34:18

Eddy was an avid sports fan and collector of sports memorabilia, he coached in the Federal Little League, PAL Hockey, and Diman Summer Hockey League.

Tonight although broken I will rejoice; rejoice for the life Eddy lived, he is safe in HIS arms. No more pain. No more Suffering. He is with the arms that hold the heavens.

We rejoice in our sufferings,
knowing that suffering produces endurance,
and endurance produces character,
and character produces hope
